Portabella Mushroom and Radish Greens Curry



Now that winter is here and there's not enough sunlight, I miss the fresh herbs and baby greens from my garden. I particularly miss tender fenugreek leaves and young mustard greens, which I incorporate in my cooking as much for their healthful properties as their fresh crisp taste.

To remind me of the joys of fenugreek leaves, I decided to include a picture here taken over summer in my garden.

In summer, I make this mushroom curry on and off with different varieties of mushrooms and greens -- the most common version is with with white button mushrooms and fenugreek leaves. Portabella being my favorite, I use it more often than other kinds. Stuffed Portabella makes a fantastic meal on its own, and especially when paired with my favorite arugula-and-pear salad, it feels like a feast.

This time, I went with Portabella mushrooms and radish greens. Now, radish is another favorite in my home garden – mainly, I must admit, for its gorgeous lilac flowers when it goes to seed and particularly the edible radish seed pods! We did the seed-saving and planting for a couple of years and then I got lazy... Maybe next year I get to do it again.

This is a simple curry, Indian-style: Saute and simmer, that's it.


Ingredients
1 cup radish greens, coarsely chopped with stems and all
1 Portabella mushroom, diced
½ large purple onion, diced
1 large tomato, diced
6 cloves of garlic, crushed or minced
½ tsp turmeric powder
1 Tbsp coriander powder
1 tsp cumin powder
1 Tbsp dark brown sugar
1 Tbsp coconut oil (or vegetable oil)
½ cup plain non-fat Greek yogurt
salt to taste

Preparation

  1. Marinate the Portabella mushroom in yogurt mixed with turmeric powder, keep it aside while assembling the rest of the ingredients
  2. Heat the oil in a pan, add the onions, garlic, tomatoes, a pinch of salt, and saute
  3. Add the radish greens and marinated mushrooms, spices and seasoning, a splash of water, cover and simmer on low heat till mushrooms are cooked through and the flavors meld
  4. Serve warm with naan or roti, or even cooked millet or cous cous.

Pan-roasted Radish and Brussels Sprouts

A big bunch of rainbow radish hop-skip-and-jumped into my shopping basket at the farmers market.

Rather than adding it raw to salads or cooking Indian-style Dal or Sambar, I went with a searing and pan-roasting them with Brussels sprouts.  Flavoring with Balsamic vinegar, mirin, and Braggs Liquid Aminos, and sautéing the radish greens along with the radishes and Brussels sprouts, seemed to make the dish all the more appealing.

Brussles Sprouts by themselves are relished in many ways at home, a few of which are shared in the Brussels Sprouts Fete post about four years ago. And, am sure this combo of radishes and Brussles sprouts can be cooked in any of those delicious methods.

With some Tabbouleh and pan-roasted sweet potato medallions, the roasted radish and Brussels sprouts rounded out a simple but filling weeknight meal.

The sweet potato medallions were roasted on a cast iron skillet with a touch of brown sugar for caramelization. 

Tabbouleh, a quick and simple salad,  tastes even better the next day. Just some chopped celery, carrots, purple cabbage, sweet onions, bell peppers, tomatoes, feta, walnuts, apples, cranberries, parsley tossed with softened bulgur. Of course, bulgur is high in carbs, complex carbs - but also high in fiber and low in fat, plus has a nice amount of protein. Being a low GI food, I like that it is easy to make and is good all round.

The dressing is just lime/lemon juice and olive oil, some salt to taste, plus a splash of orange zest for this tabbouleh.




I had a small lump of Jalapeño goat cheese and served small discs of it as garnish to add a bite to the roasted radish and Brussels sprouts.

Picked up some fresh veggies bursting with color at the farm and couldn't bring myself to cook them...

Of course, couldn't let them wilt and shrivel either.

So, made this simple dish that showcases the varying flavors and bright colors.

  1. Clean, dice, and par-cook the carrots, gold beets, and purple radish in the microwave for about 4 mins
  2. Meanwhile, clean, chop, and saute the beet greens and radish greens, with some diced onions and a touch of coconut oil
  3. Drain and toss the cooked beets, radish, and carrots with the greens, adjust salt, allow to cook together
  4. Meanwhile, grind some coconut and green chilies together - about  cup grated coconut with 1 Serrano chili; then stir this into the veggies in the pan
  5. Tempering (optional): Heat coconut oil in a small pan, when shimmering add the mustard seeds and when they pop, add the cumin seeds and when they splutter, remove from heat and toss it into the veggies.
  6. Serve warm with rice or roti; or enjoy as-is.

Jackfruit Seed, Rhubarb, Radish Greens Koottu



When the perennial rhubarb comes up every spring, I feel an urge to use it in as many dishes as I can. So, when I get past the usual rhubarb scones, rhubarb-strawberry cobbler, rhubarb chutney/relish, rhubarb sambar, I check the garden for what else can be paired with rhubarb for a wholesome dish.




The last of the radish greens were waiting in the garden. Fresh jackfruit seeds and fresh coconut were handy. And so this Jackfruit seed + rhubarb + radish greens koottu popped into existence.




Ingredients
¼ cup finely diced fresh coconut
1 Serrano or Jalapeño chili (or a milder variety if preferred)

½ yellow onion, diced finely
½ cup cooked jackfruit seeds
½ cup diced rhubarb
radish greens (about 2 cups chopped and loosely packed)
½ cup yellow split moong dal
3 to 4 cups water
½ tsp turmeric powder
salt to taste

For tempering: 1 Tbsp gingelly oil / sesame oil, ½ tsp mustard seeds


Preparation

  1. Combine the green chili and coconut and grind to a fine paste
  2. Heat the oil in a pan, add the mustard seeds and wait till they pop; add the onions, turmeric, and a pinch of salt, sauté for a few minutes
  3. Add the rhubarb, radish greens, jackfruit seeds, and moong dal, 3 cups water, cover and simmer on medium low heat till moong dal is cooked; (check as add more water as needed)
  4. Off heat stir in the coconut-chili paste and serve warm with hot basmati rice or roti  or naan
